Blue Bison - Hebron                                                                2025 

Blue Bison in Hebron is a locally owned restaurant in a historic building located in the downtown area.  

The building was restored and decorated beautifully.  Frank took a lot of pictures while I looked at the menu.  It was surprising how many items were on it.  They also serve all kinds of coffee, smoothies and more.  

We weren't very hungry so we ordered a calamari appetizer with a red pepper cream sauce and shared it.  It was very good!  So many restaurants over cook calamari but this was near perfect.  Cindy ordered an Almond Milk Mocha and I had my usual drink, water.  

Hebron is lucky to have such a great place to eat.  That's something we've found as we've been traveling around Nebraska for the Passport.  Lots of small towns are experiencing revitalization in the old business districts and they usually include a cafe.  You can find the Blue Bison and the menu on Facebook.  Go and check it out for yourself and enjoy.
